Grilled Tomato & Feta Panzanella

This hearty and delicious salad is perfect for using your summer tomatoes!


2 lbs. heirloom tomatoes

1 medium red onion

4 oz. french bread

1/4 cup extra-virgin olive oil

3 oz. block feta cheese

1 - 14.5 oz. can cannellini beans

1/2 cup fresh basil, chopped

1 tsp. red wine vinegar

Salt, to taste

Pepper, to taste


Heat grill to high heat.

Prep ingredients: Cut tomatoes in 1/2 inch thick slices. Cut onions in 1/4 inch thick slices. Cut bread in 1 inch thick slices.

Brush tomatoes, bread and onions with olive oil. Place tomatoes, bread, onions and block of feta directly on grill grates. Grill until charred on both sides, about 1-2 minutes per side. Remove from grill and sprinkle with salt and pepper. Let cool 5 minutes and then cut tomatoes, onion and bread into chunks.

Combine tomatoes, bread, onion, beans, basil, vinegar and 3 tablespoons of olive oil in a large bowl and lightly toss to combine. Top with crumbled feta cheese and serve immediately. Enjoy!
