Breakfast Burrito Bowl
This deconstructed breakfast burrito will be your new favorite way to enjoy breakfast!
1/2 cup breakfast potatoes
2 tsp butter
1/4 cup turkey sausage
1/4 cup black beans
1/4 cup shredded cheese
2 tbsp salsa
1 tbsp sour cream
Avocado, halved and diced
In a small bowl, whisk eggs with a sprinkle of salt and pepper.
Heat black beans in a sauce pan over medium heat for 5 minutes, stirring often.
In a small pan over medium heat, melt butter. Once hot, add eggs and cook until set, turning over in pan occasionally.
To a serving bowl, add cooked and hot breakfast potatoes, then eggs, sausage, and black beans. Top with shredded cheese, salsa, avocado, and sour cream.
Make it Vegetarian! Swap the turkey sausage for your favorite veggie sausage patty! I prefer Morning Star brand.
