Breakfast Pizza

These pizzas have everything you would want in a breakfast, in a whole new way! Delicious and filling!

Ingredients

  • 8 mini naan flatbreads

  • 3 eggs

  • 1 cup frozen hash browns, thawed

  • 8 oz. shredded cheddar cheese

  • 1 tomato, chopped

  • 1/4 tsp salt

  • 1/8 tsp black pepper

Directions

Preheat oven to 425°.

On 2 baking sheets, arrange 4 mini naans per sheet.

Use 1-2 tbsp of cheddar cheese to form a dam around the outer edge of each naan. This will keep egg mixture from running out.

In a large bowl, beat eggs, salt and pepper until combined. Fold in 1 cup of cheddar cheese and 1 cup thawed hash browns.

Using a ladle, scoop mixture onto naans. Sprinkle sausage and tomato evenly on top of each.

Bake until edges are browned and center of eggs are set, about 16 minutes.

Make it Vegetarian! Substitute sausage for Morningstar Veggie Sausage Patties. Cook 2 patties in microwave for 45 seconds. Crumble up and top pizzas before placing in the oven.
