This simple and delicious side dish is a great addition to any meal!
1-1/2 cups rice
1 tbsp olive oil
2 tbsp butter
1/2 cup minced onion
3-1/2 cups chicken stock
Melt butter and olive oil in a medium sauce pan over low heat. Add onion and sauté until onion is soft and translucent. Mix frequently as to not let onions burn.
Mix rice into onion and stir to combine.
Add chicken stock, 1/2 cup at a time, and let simmer until broth is absorbed into rice. Continue this process until all chicken stock is combined.
